  • 1/2 cup butter softened at room temperature
  • 1 cup white sugar
  • 2 eggs.
  • 1 teaspoon vanilla extract.
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 3 medium ripe bananas mashed, (about 400g)

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5 inch loaf pan.
  2. In a large bowl, put the softened butter and sugar and mix until it's mixed. Add the eggs and vanilla extract, and stir for about 2-3 minutes with a hand mixer. Combine the flour, baking powder and salt in a small bowl. Stir the dry ingredients into the butter mixture until smooth. Finally, fold in the plain yogurt and bananas. Spread evenly into the prepared pan.
  3. Bake at 350 degrees F (175 degrees C) for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool 10 minutes in pan on a wire rack, then remove from pan. Cool completely on wire rack.
